The great cheese experiment part 3

The cheeses have been pressed (2 of them) and now have to be unwrapped, wiped with salt water, re-wrapped and turned every day.

  1. Wow…am impressed. How easy would that be to do without a kit, I wonder?

  2. We did it without a kit. I only had to order the vegetarian rennet, a length of muslin and a small plastic cheese mould (used http://www.smallholdersupplies.co.uk/ ) The online recipe did call for some special starter bacteria and we may yet regret not buying that, but my excuse is that we were aiming for a 1620s style cheese :-)
